1. Spicy Kerala Chicken Curry

We all know that south Indian cuisine has tons of flavourful dishes to offer. Whether it is the simple everyday idli, sambhar and wada or delicious avial, paniyaram and rasam – south Indian dishes are full of complex flavours that simply leave is spellbound. We have tried our hands in making these south Indian dishes at home, but if you want to try something different yet flavourful, then we bring you a scrumptious Kerala-style spicy chicken recipe that will make you lick your fingers!

The succulent, crunchy and spicy chicken chunks just melt in our mouths in the first bite. This recipe of spicy Kerala-style chicken is first fried in aromatic flavour and tangy spices. This meal is simple to prepare at home as a side dish for a dinner gathering. It pairs well with rice and any roti/naan of your choice.

Ingredients of Kerala Chicken Roast

  • 1 Kg chicken
  • For the marination:
  • 1/4 tsp turmeric powder
  • 1/4 tsp chilli powder
  • 1/4 tsp coriander powder
  • 1 tsp vinegar/lemon juice
  • 5 Garlic cloves
  • 3-5 Green chillies
  • to taste salt
  • For roasting:
  • 3 medium onions
  • 1 large tomato (remove skin & make puree), blanched
  • 2 Green chillies (slit)
  • 3 sprigs curry leaves
  • 1/4 tsp garam masala powder
  • 1/4 tsp pepper powder
  • 1 Lemon (juiced)
  • Oil

How to Make Kerala Chicken Roast

1.

Clean and cut the chicken into medium sized pieces.
2.

Make a paste of all the ingredients under marination.
3.

Marinate the chicken pieces with this paste and keep aside for an hour.
4.

Cut onions into very thin slices and fry in hot oil. Drain them and keep aside.
5.

Fry the chicken pieces in the same oil until almost done. Keep the pan covered so that the chicken does not get browned, but is cooked inside. Drain them and keep aside.

Heat 2 tbsp of oil in another pan (You can use the same oil in which we fried the chicken pieces. This will enhance the flavour). Add slit green chillies and curry leaves. Saute for 1 minute.

Add the tomato paste to this and saute for 1 minute.

Now add the prepared chicken & roast until it is dry.

Make sure that all the chicken pieces are well coated with the tomato paste.

Sprinkle garam masala & pepper powder and mix well.

Add lemon juice and mix well. Check for salt. Add a little if needed.

Now add the fried onions and mix well.

2. Aloo Curry

This Kerala style potato curry is a mix of sweet and spicy flavours that you have never had before. This dish can be made in under 30 minutes and will be loved by people of all ages.

  • Ingredients of Kerala Style Potato Curry

    • 1 Chopped onion
    • 2 Chopped potato
    • 2 Green Chillies
    • 1 cup Hot water
    • 1/4 cup Tamarind water
    • 1/4 cup Coconut Milk
    • 1/4 tbsp Red chilli powder
    • 1/4 tbsp Turmeric powder
    • 1/2 tbsp Coriander Powder
    • 4-5 Curry Leaves
    • Salt according to taste

    How to Make Kerala Style Potato Curry

    1.

    Add some jeera in hot oil, then add slit green chillies and onion. Let it cook for a while.
    2.

    To this, add potatoes, salt, turmeric, red chilli powder, coriander powder, curry leaves and mix. Let this cook on medium to low flame for five minutes.

    Now, add hot water, then tamarind water and garam masala, stir this well.
    4.

    Throw in some coconut milk and cover the pan for about 10 minutes. Cook on low flame.

  • The minute we think of having a South Indian dish for breakfast, the first thing that pops up to our mind is an idli or dosa sambar. But there’s surely more to the cuisine than just this, right? If you’re bored to death with the usual South Indian fare, here’s something new for you to try. Kadala Curry is a staple in most households in Kerala and is usually eaten for breakfast. The curry serves as a great accompaniment and is had with coconut-rice puttu or a light appam.

    Made with an array of spices, this Malabar curry is based with boiled black chana. Some other ingredients required for the curry are traditional Keralite spices such as mustard seeds and coriander. Grated coconut and curry leaves are also added to the Kadala curry decoction to give it an edge of Southern Indian flavours. If you thought Kadala curry wasn’t spicy at all, dispel that thought entirely as the recipe uses two whole red chillis as well as red chilli powder. Spices and coconut is ground together to make a flavourful paste, which is what the Kadala curry uses as a base.

4. Malabar Chicken Curry

Ingredients of Malabar Chicken Curry

  • 3 Tbsp Coconut Oil
  • 15-20 Curry leaves
  • 1 tsp Coriander Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Black pepper powder
  • 2 small Tomatoes (chopped)
  • 2 medium Onions
  • 3-4 Green Chillies
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Mustard Seeds
  • 500 gram Chicken Pieces
  • to taste Salt

How to Make Malabar Chicken Curry

1.

Heat oil in a pan, add chopped and sliced onions and fry until slightly brown. Keep stirring while frying. Once done, add curry leaves, green chillies followed by ginger-garlic paste. Fry again.

The next step is to add coriander powder, turmeric powder, Kashmiri red chilli powder, black pepper powder and mix everything well. Keep stirring for 2-3 minutes.

After that add chopped tomatoes, salt to taste, cover and cook again for 3-4 minutes or until tomatoes turn mushy.

Once done, add chicken, mix and cook on high heat for 5 minutes. Then add fresh coconut paste and water (To make coconut paste, add coconut and water in a blender and blend until smooth and consistent paste). Cover and cook for 5 minutes.

For tempering or tadka

1.

heat coconut oil in another pan, add mustard seeds, green chillies and let them splutter for 5-6 seconds. Then add chopped coconut (fresh) along with shallots. Fry on medium heat until the onion turns slightly brown.

Pour the chicken tadka on the chicken curry and your delish is ready to relish.
3.

Serve with parotta, steamed rice and even tandoori paratha along with lime quarters and of course onion rings.
